OLD FASHIONED DOUGHNUTS

1/2 cup milk
1 egg beaten
1/2 cup sugar
1 tablespoon melted butter
2 teaspoons baking powder
about 1 3/4 cups all purpose flour
1/4 teaspoon nutmeg
1/2 teaspoon salt
confectioners or granulated sugar
vegetable oil or shortening for frying

Mix the milk, sugar, baking powder, nutmeg, salt, egg and butter in a large bowl. Add the flour
gradually, using just enough so that the dough is firm enough to handle. Cover the dough and chill for about an hour. Turn out onto a lightly floured board and knead for a few minutes. Roll out about 1/2 inch thick. Cut with a doughnut cutter or sharp knife into 3 inch rounds,cutting out the centers (which can also be fried). Place on a lightly floured piece of waxed paper and let rest for about 5 minutes. Heat fryer oil to 360 degrees. Fry about 3 or 4 doughnuts at a time, turning with a fork or tongs when one side is browned and continuing tofry until brown all over. Drain on paper towels
and dredge in sugar. Yield: 18 doughnuts.

CHOCOLATE DOUGHNUTS.........add 1/2 cup unsweetened cocoa with the flour. Dust the
drained doughnuts with sugar or spread on creamy chocolate frosting.

MOUSE EARS

1 can refrigerator biscuits
2 teaspoons cinnamon
1 cup melted butter
1/2 cup sugar
shortening or oil for frying

Flatten biscuits into thin circles. Fry in hot oil (360 degrees), until light brown. Drain on paper towels. While still hot, brush with butter on both sides and sprinkle with mixture of cinnamon sugar.

DEEP FRIED CHICKEN WINGS

2 pounds chicken wings
1/2 teaspoon dried basil
1/2 cup all purpose flour
1 egg
1 teaspoon salt
1/3 cup milk
1/8 teaspoon pepper
2 tablespoons lemon juice

Heat oil to 375 degrees.
Cut tips from wings and save for stock or discard. Cut wings in half at joint. In one shallow dish,
combine flour, salt, pepper, and basil. In second shallow dish, combine egg, milk and lemon juice.
Roll wings in seasoned flour, then dip in egg mixture. Roll again in seasoned flour and place on
wire rack for 30 minutes to dry. Roll in flour again if coating is still moist. Fry wings in small batches
of 5 or 6 until golden brown, about 3-4 minutes.

APPLE FRITTERS

1 egg
1 cup sifted flour
1/2 cup milk
1 Tablespoon sugar
1 Tablespoon oil
1 teaspoon baking powder
1 cup diced apple

Beat egg with milk, then stir in oil and apple. Add combined dry ingredients, stir just until mixed. Drop from a tablespoon into deep liquid shortening heated to 365 degrees. Fry about 4 minutes or until brown and done in the middle. Put on paper towels to drain off excess oil.

DEEP FRIED ICE CREAM

corn flakes
2 tsp. white granulated sugar
1 tsp. cinnamon
2 or 3 eggs
ice cream

Crush corn flakes. Beat eggs well. Add sugar and cinnamon to corn flake crumbs. Make ice cream into as manyballs as you want (use ice cream scoop). Dip first in corn flake mixture, then into eggs then back into corn flakes. Deep fry for 15 seconds only. ENJOY.

DEEP FRIED POTATO PUFFS

3/4 c. water
3/4 tsp. onion salt
1 Tbsp. butter or margarine
1/4 c. milk
3/4 c. Hungry Jack mashed potato flakes
1/2 c. flour
1 tsp. baking powder
1 egg
2 strips fried and crumbled bacon
oil for deep frying

In medium saucepan bring water, onion, salt and margarine to a rolling boil. Remove from heat and stir in milk and potato flakes and flour, baking powder, egg and bacon crumbs. Drop mixture by teaspoon into 2 or 3 inches of oil at 375 degrees. Fry for 1 to 2 minutes on each side until golden brown, drain on paper towel and serve immediately. Makes about 24 potato puffs. To avoid greasiness fry only
4 to 6 puffs at time.
